I like this recipe,its a 'no fuss,no faff can't go wrong'recipe-doesn't even need a set of scales and takes very little time to prepare.I have made this many times,never weighted the ingredients once and always turns out delicious.
Fore end joint-its a great piece of bacon that is always underestimated-flavour second to none and if you buy from the Wiltshire Bacon Company our butchers have already deboned,trimmed and prepared it ready to go.
So,the easy bit:
- Bacon Fore end Joint
- Dessert spoon black peppercorns
- Handful shallots-skin,leave whole.
- Two oranges-cut into four-remove any seeds.
- 1 small chilli,finely diced.
- Vegetable stock-jug full.
- 2-3 Good spoonfuls of honey.
Add all the ingredients to a slow cooker or casserole dish,enough stock is added so it covers the bacon.Leave the net on the bacon joint.
Switch the slow cooker to Low and leave for around 3 hours.If you are using a casserole dish-place in the oven preheated to 140 °C and leave for again 3 hours.
Carefully lift the joint from the pot with a couple of forks and place on a baking tray.Remove the netting carefully.Add a spoon of honey over the top and bake at 180ºC for around 10 mins until the rind begins to crisp.
That's it -serve with mashed potato and steamed greens-the juices in the pot are great to poor over the potato!
